Happened to me once really bad but it covered fine with paint. Painter spotted them in with a brush then 2 coats of paint and it was mint.

I second invoice simple, it's fast, and looks professional as you can add your logo and a signature. And as you said no more 'oh it mustn't have come through' b*ll***s.
A while ago someone I know rendered a large industrial unit, was obviously a lot of dough so did a payment plan as a one off. Few months down the line they went 'bust' and left the country. I'd steer clear of that shite
