Sand cement or lime?

Renovating old house in NorthWales. Most walls built from stone/slate and mortar which I assume is lime mortar. I have opened up a window into a doorway in what was the back outside wall but is now internal due to extension.

Should I render the wall using Lime or can it be sand/cement?
