One coat skimming

I used to do that but don't do it anymore, I also used to get my first coat on and then second coat straight on top and flatten in first coat as I went along second coating, if that makes sense? Now I first coat, flatten, second coat flatten etc.
If am one coating the boarding has to be good which it is most of the time.
I mix up and fill the long joints then I lay on a good 3mm coat as flat as I can even if it takes a few minutes longer because it hangs for a while.
Then after it has pulled in a touch I sponge it without adding water then trowel followed by second trowel then a dry polish.
But timing can change depending on the boards and weather
