Think you need to brush up on your grammar. He's used G** as an adjective, describing the doctors, just like your example of black doctors, or like in white, priveledged male. He didn't use it as a noun, which might have caused offence, like in a pair of gays.

It does for me. He's describing a couple of G** doctors. If they were American he'd have said a pair of American doctors, or Chinese, Chinese doctors, etc. It's a good description.
