If you Having trouble with the pva either use blue grit and skim or as already said wait till tacky before laying on dont go on to early will be pull and drag like s**t. if not call a plasterer https://www.mbplastering.co.uk All the best mate
Nooooo Never Put Bonding on a Ceiling to much weight with 3 coats. if anything chuck a few handfulls of bonding in your first coat to get over artex just make sure you let it go almost dry before you 2nd coat
