Plasterboard OK on Unused Chimney Breast?

Hi all

I have stripped my ground floor chimney breasts down to brick - the old plaster was completely so thought why not, let's start again. Plus I'm in the middle of a big renovation so why not add more to my workload.

These chimneys are unused and blocked off, they will never be used (in my lifetime certainly). So I'm wondering how best to deal with them now. My thoughts were leaning to a dot 'n dab job to help even it out, then skim over the top.

Is this a generally good way to deal with this all things considered, or is this a big no-no, for one reason or another?
