Overboard ceiling??

About to do the internal repairs and my plasterer has advised to board over the ceiling rather and pull it down. I’m worried there might be mouldy insulation inside, as the ceiling is now bowing on one side I’m just worried it will look s**t. I want it done properly.

What would people advise? Here are some pics, they are going to remove the frame around the velux and box it in nicely, but as you can see the ceiling slopes to the left hand side of the window.
