I've just refurbished a restaurant/bistro for a client. It is a rustic style finish and after discussing venetian plaster with them they asked if it was possible to create a signboard for them.

Nice 1 @Mike814 what did u use for the stencil lettering matey?
I layed on a coat of white carrara, then after drying time put low tack masking tape on the board where the lettering was going. I printed the letters out on card and cut them out and then drew round them on the masking tape. I then carefully cut round the letters with a scalpel and removed the outside of them. Then carried out a normal carrara process over the whole board and removed the tape whilst still wet. Bit of a long winded process but it seemed to work
