Removing laths and boarding onto joists only

Hi guys,

Taken back the old plaster on a couple of walls and about to board it. The issue is the boards don't sit level as some of the laths are proud. Is it better to hack them off and simply board directly to the joists, using a thicker board?
 
Yes and in some cases it's best to counter batten the ceiling to take out some more undulation.

Just remove laths and board with 12.5 mm boards. Put a straight edge across timbers first and pack out where required to make level.
 
You can always double board the walls with 9mm, tack the first layer then dab the 2nd. Or bodge it and dab onto the joists then screw when set.
