Old house with lime plaster

Hi, new member here

we recently purchased a old house in a medieval village in Lot et Garonne. Two of the internal rooms upstairs have lime plaster infill between a substantial timber frame. The plaster is in very poor condition and needs removal and replacement with new lime plaster. In areas the plaster has fallen off revealing what looks to be mud daub reinforced with horse hair or straw. The house dates back to the 16C.

In applying a new coat of plaster should a fabric reinforcement be used? Any advice welcome
Any good suppliers in my region of France. Any ideas of sq m budget for two rooms of around 60 sq m each with a floor to ceiling height of 2.6 m

All plaster in France is lime based. Finding a plasterer or any other trade in France will be a problem.
