How hard should Mono be?
iv seen jobs were its very dusty and you can mark it with screwdriver , could even dig it out with a trowel end!
then others were it is solid!

Why is this?

If it soft and dusty then rapid drying.

The British stuff Weber and k rend being fast setters and with Limestone are hard but brittle. The German gear being slow setters and quartz are bit softer but not as brittle.

so if a building is brittle and soft its not always due to poor workmanship its more a case of the product not being up to the weather.

No the product us up to the weather. Some renders are high tension and some are lower. 15mm thick of high tension is going to be brittle and will snap if the substrate moves. But who,s fault is that? The building and not the render but proving it is another matter.

it is down to the set or curing gone wrong.

if you see a mono job done in winter it never sets as strong as it should be, if the temps have been freezing overnight some jobs will forever come away and you will constantly see dust and bits falling away.

the cold breaks the set

And in good weather?

What do consider good weather?

For me 15-20c and no more dry, overcast and no wind.

if you take measures to control the suction in hot weather then there should be no issues. the bags must be in good date. anything at the end of shelf life usually always misbehaves

Have you ever had the sun kill your Mono or should a good Renderer never get in that situation out of interest ?

We did the inside of job and the outside was set out to another gang who put k-rend scrape on with a machine. It looked a great finish but did not seem as hard a finish as hand applied. Nothing that would fail but just not as strong. It seemed very creamy coming out of the machine much more than than it would from the mixer.

I had the sun make the gear go faster but never to the extent it would break down the strength of the product no. still as hard as usual once finished.

I dont know many having had a problem like this maybe it is not the problem you have
