Lockdown prep advice please

Thanks in advance for any advice & hopefully all back to work soon
Just looking for a bit of advice on prep work before I get my kitchen replastered-
Chimney flashing leaked over many years before I moved in & I copped for the lathe & plaster ceiling falling in
I’ve pulled down the remaining ceiling & cleared all back to the ceiling joists & internal stone wall has what’s left in the photos.

  1. Any advice would be really helpful whether to strip right back (Done all the donkey work removing the ceiling aaachooo ) to the stone or leave the remaining lime plaster in place for the plasterer to patch up ?
  2. Is it worth insulating internally on a natural stone wall ?
  3. Since the ceiling has come down every noise can be heard in the upstairs bedroom -amazing how soundproof 100yr old properties are- what’s the best sound insulation between floors in a Victorian property?
  4. While the ceiling is down I’m getting the lighting sorted & ceiling boarded- is it preferable to leave downlighting holes until after skimming or ok to cut beforehand?
