Installing plasterboard for recessed mood lighting

I am installing plasterboard to the ceiling and walls as part of a total bathroom refit. I have a plasterer lined up to do the skimming for me. However, I want to create edge mood lighting by having the ceiling plasterboard dropped by a couple of inches and stopping short of the walls, also by the same couple of inches, to leave a recess to install LED flexi strip lighting. Attached is a picture similar to what I want to achieve.

Can any of you professionals give me advice, most specifically on:

1. Materials - I plan to use MR plasterboard (I'm using Jackoboard in the shower area to be tiled). Is this suitable?

2. How do I get a sharp clean and straight edge on the "floating ceiling" boards? Do I use an edging strip, or rely on cutting straight or is this something my plasterer will fit before he skims?

3. How do I make it practical for my plasterer? Do I batten the ceiling for the dropped board but not fit them, let him skim at the ceiling level then install the dropped plasterboard so he can then skim that?
