Garage conversion

Hi All. I am having my garage converted into a kitchen diner. The garage has been up ten years and it was built with a double wall/cavity with insulation. There are two walls that are bare block/thermal block.
I have never done dot & dab but I have battern and boarded a small room before. Is it okay to battern and board the two walls as I also want to use plasterboard with the insulation on the back to prevent extra heat loss. Everyone says to dot and dab today but I can't really go wrong with putting batterns up screwing the boards to these?

There is also an added problem of one of the walls, where it flows from the garage into the house. 2m of wall has been rendered and skimmed which is obviously going to be proud of the unfinished wall that will meet it ( there is a doorway here at the moment that will be ripped out) any suggestions would be appreciated.
