Drying a room out

Went to look at a job this morning, Empty house, pipe burst in the loft, 100 gallons of water has brought a ceiling down, 30m2, lathe and plaster which has already been overborded and skimmed. Lathes are sound so was going to tear down boards and reboard. Question is, will the exsisting ceiling need to be bone dry? Am going to put dehumidifiers in, but the customer wants it done before xmas for soom reason.

Personaly I wouldn't want to reboard a damp ceiling, what do you guys think?
 
you could always put some of that blue membrane between the cieling and the plasterboard
 
I can't see why you're not just pulling out the old ceiling as well pug, it can't get any messier, and it will get rid of all the wet debris, enabling you to use the dehumidifiers more efficiently, thus drying it out quicker and therefore completing it before Christmas, consequently leading to a satisfied customer. Yeah I know...

Just being lazy, room is 5m x 6m and ceiling is 3.4 high.

I'll do the right thing. Promise!
