Advice about Sealing chimney

We have an old fireplace which we removed and sealed up and put plasterboard over it etc. We are building a unit where it used to be so don't have option for vent in that room. By leaving the top of the chimney open, will this create enough ventilation to avoid dampness?

no you will end up with jackdaws nesting and blocking it up fit an elephants foot on pot
