If I’m unsure I’ll put a hole either side of the joist to gain the centre. I’ve tried joist finders before because I hate the dust but they get a bit lost on thick lath...

Just brush off looses mortar & dust, wet allow water to soak in so the wall is damp but without surface water, Dab. It will stick like sh**. Trust me. If your concerned do this in one area with a small piece of board, say 5” square and try to Pull it off the following day.

It’s at least 2days looking how dry tht ceiling is... I’d put my money on 3.
