Plaster Shattering

I decided to get a professional in to do a plastering job, although I did consider doing it myself. It hasn't all gone 100%. Can anyone tell me what is going on here. I'm cutting the holes for the electric sockets - using the correct saw for the job - and the plaster is shattering. It's brittle and even if I score with a Stanley knife before cutting it still shatters. See photos attached.
What has gone wrong? Has the wrong type of plaster been used? Am I doing something wrong?

Your plasterer has done nothing wrong,It’s just the finish plaster that’s coming away which is to be expected when cutting holes in walls whether it’s board or solid plaster the dry lining box nearly covers all the damage anyway bit of easifill a light sanding down and you won’t even notice

Just use a decent stanley blade and some patience.


Your pulling action is what's chipping it.



As above, a multi tool would work as it's oscillating.



But may as well just knife it,
