Which product is best for 1930s semi with lime mortar?

Currently DIY renovating my first property which I plan to live in myself.

1930's semi, double skin wall with what I think is called a finger cavity? about 2-3 inches wide. Filled with rubble etc in places.
External walls are double skin and some bricks are turned sideways and tied into the outer skin. All mortar is lime and I have repaired with NHL 3.5 mortar mix.

External walls are in good condition, no render. No signs of damp at all in the house, ample ventilation bricks in the kitchen, sub floor and bathroom.

Most walls are back to bare brick and lathe ceilings are removed ready to be boarded.

I know ideally I should board ceilings with wood / wool boards and skim the lot with lime.

BUT, to save time and money, can I get away with using gypsum?
The house is small and some doorways meet the corner of the room so boarding the wall isn't really a practical option.

Ideally I'd like to gypsum plasterboard ceilings and unused fireplace, wardrobe etc. Hard wall and multi.

I understand I may be prone to some cracking? How bad could I expect as since I will be living here I don't mind the odd few repairs over the years. Will I be OK with damp if kept well ventilated?

I was consider a lime / cork insulating render on the outside.

I understand sand, cement and waterproofer might be another option?

Any advice would be really appreciated.
